Extra Virgin olive oil (EVOO) is the highest quality of olive oil, due to its free oleic acid and antioxidants. Moreover, it is most preferred because of its anti-inflammatory properties and natural olive flavour.
We already know a lot about the Mediterranean diet and its benefits for a healthy heart. In fact, several studies have indicated that olive oil is anti-inflammatory, contains abundant antioxidants, and is beneficial for vasodilation.
Nutrition and cooking experts agree that one of the most versatile and healthy oils to cook with. However, as long as it’s extra virgin (EVOO), what means that it is not refined, and therefore of high quality.
Virgin olive oil when Extra, is therefore considered excellent for cooking, especially when you aim is to lose weight.
Another way olive oil may help to protect the heart is its containts of polyphenols. Actually, some of these polyphenols can prevent blood platelets from clumping together, which is a cause of heart attacks.

Cooking with olive oil
Use only EVOO to drizzle vegetables, soups, stews, bean dishes, meats and fish. If you are looking to cook at higher heats watch out not to go above its smoke point.
When cooking it is important to note that some of the alternative oils are processed. Actually, they may produce carcinogenic compounds when heated, avoid them.
Olive oil could also protect us from cognitive decline, osteoporosis, and even improve the balance of bacteria in our guts. Note however that many of these healthy phytonutrients are present in high amounts only in EVOO (Extra Virgin).
Buying the right type of olive oil is crucial. Exactly, there are three main grades, refined, virgin, and extra virgin, the least processed or refined type. Consequently, drinking it regularly may benefit your heart, bone, and digestive health and help stabilize your blood sugar levels.
Olive oil should taste fresh, not heavy and “oily”, and bitter and pungent means fresh.
